通过中性蛋白酶水相溶剂中提取辣木油的单因素和正交试验,研究了影响辣木油水酶法提取的主要因素,得出了水酶法提取辣木油的最佳工艺条件。研究结果表明,最佳条件为:酶用量为辣木籽质量的3.0%,液料比9:1(mL:g),温度50℃,孵育时间18h,pH值5.0的条件下,辣木油平均得率超过28.6%。
